"A classy example of this superior grand cru climat, the 2017 Chablis Grand Cru Les Preuses unfurls to reveal lovely aromas of orange blossom, seashells, iodine and clear honey. On the palate, it's medium to full-bodied, satiny and layered, with tangy acids, good depth and concentration and an intensely saline finish. It's fermented and matured entirely in tank."

Revisiting the 2017 vintage from this fine 16-hectare Maligny-based estate, much of the domaine's production is defined by the mid-palate weight characteristic of Maligny's clay soils. There is a tradition of comparatively long élevage at this address, with the wines maturing in stainless steel foudres, "tronconic" wooden tanks, and barrels in a cuverie built in 2002. Bordet has been working the soils since the 1990s, eschewing herbicides and working to reduce use of chemicals. Precision, finesse and elegance are his watchwords, and all are identifiable in these ably crafted wines.
